Evliya \u00c7elebi&#8217;nin babas\u0131 Osmanl\u0131 saray\u0131nda Kuyumcuba\u015f\u0131 olan Dervi\u015f Z\u0131ll\u00ee Efendiydi. I. Ahmet zaman\u0131nda saraya al\u0131nan, sonradan Dervi\u015f Z\u0131ll\u00ee ile evlendirilen annesi Abaza olup, Melek Ahmet Pa\u015fa ile akrabad\u0131r.<\/p>\n<p>Medrese e\u011fitimi g\u00f6ren; hat, musik\u00ee, tecvit, ilm-i nahiv vb. dersler alan \u00c7elebi, babas\u0131 ve \u00e7evresindeki ya\u015fl\u0131 ki\u015filerin anlatt\u0131\u011f\u0131 ser\u00fcven dolu hikayelerin etkisinde kalarak gezme\u011fe, uzak \u00fcl\u00adkeleri g\u00f6rme\u011fe merak sarar.<\/p>\n<p>Kendi anlat\u0131m\u0131na g\u00f6re bir gece r\u00fcyas\u0131nda Peygamberimizi g\u00f6rm\u00fc\u015f, &#8220;\u015fefaat ya Res\u00fcl-Allah.&#8221; di\u00adyece\u011fi yerde, heyecanla dili dola\u015farak &#8220;Seyahat ya Res\u00fcl-Allah&#8221; demi\u015f, bu olaydan sonra da seyyah olmu\u015ftur.<\/p>\n<p>\u00d6l\u00fcm\u00fcne dek, ba\u015fta \u0130stanbul olmak \u00fczere, Osmanl\u0131 \u0130mparatorlu\u011fu&#8217;nun uzak yak\u0131n \u00e7e\u015fitli illerini ve \u00e7evre \u00fclkelerini gezen \u00c7elebi, g\u00f6rd\u00fcklerim dikkatli ve ayr\u0131nt\u0131l\u0131 bir \u015fekilde kaleme alm\u0131\u015f; bir bak\u0131ma ya\u015fad\u0131\u011f\u0131 y\u00fczy\u0131l\u0131n sosyo-k\u00fclt\u00fcrel tarihini yazm\u0131\u015ft\u0131r.<\/p>\n<p>Evliya \u00c7elebi Bursa, \u0130zmir, Trabzon, Erzurum, Sivas, Van, Diyarbak\u0131r, Bitlis vb. illerle Suriye, Filistin, Irak, Hicaz, M\u0131s\u0131r, Sudan, Rumeli, Balkanlar, \u0130ran, Azerbaycan, G\u00fcrcistan, K\u0131r\u0131m, Kafkasya, Macaristan, Avusturya, Almanya, Hollanda, Lehistan, \u0130sve\u00e7, Rusya, Yunanistan vb. \u00fclkeleri dola\u015fm\u0131\u015f, verdi\u011fi \u00e7e\u015fitli bilgiler yan\u0131nda bu yerlere ait zira\u00ee \u00fcr\u00fcnler, yemek \u00e7e\u015fitleri, ticar\u00ee mutfa\u011fa ait yemekler, beslenme ve mutfak k\u00fclt\u00fcr\u00fcne ait notlar\u0131 b\u00fcy\u00fck bir ustal\u0131kla aktarm\u0131\u015ft\u0131r.<\/p>\n<p>Bu bak\u0131mdan beslenme ve mutfak tarihi ara\u015ft\u0131rmac\u0131lar\u0131, ba\u015fta bu kaynak olmak \u00fczere yerli ve yabanc\u0131larca kaleme al\u0131nm\u0131\u015f seyahat yaz\u0131lar\u0131na \u00f6nem vermeli bunlar\u0131 tarayarak ara\u015ft\u0131rmalar\u0131nda kullanmal\u0131d\u0131rlar.<\/p>\n<p>Evliya \u00c7elebi Seyahatnamesi&#8217;nin Kafkaslarla ilgili b\u00f6l\u00fcm\u00fc \u00c7erkes k\u00fclt\u00fcr\u00fc, tarih ve sosyal hayat\u0131 bak\u0131m\u0131ndan b\u00fcy\u00fck \u00f6nem arz etmektedir. Mehmet G\u00fcne\u015f&#8217;in 1969 y\u0131l\u0131nda \u0130stanbul&#8217;da yay\u0131nlanan &#8220;Evliya \u00c7elebi ve Ha\u015fim Efendi&#8217;nin \u00c7erkezistan Notlar\u0131&#8221; adl\u0131 kitab\u0131 Seyahatname&#8217;nin bu k\u0131s\u0131mlar\u0131 taranarak haz\u0131rlanm\u0131\u015ft\u0131r. Biz bu notlar\u0131n \u00c7erkes mutfak k\u00fclt\u00fcr\u00fcyle ilgili b\u00f6l\u00fcmlerini \u00c7erkes gastronomisinin birinci elden kaynaklar\u0131 olmas\u0131 bak\u0131m\u0131ndan aynen aktarmakta yarar g\u00f6rmekteyiz: &#8220;(&#8230;) Yemek vakti de\u011filse bile &#8220;Hac\u0131 Cago istermi\u015f&#8221; diye k\u00fclde pi\u015fmi\u015f beyaz ekmek getirirler. Ekme\u011fe bu diyarda \u00c7ago derler.<\/p>\n<p><strong>\u00c7erkes Yemeklerinin Medhi:<br \/>\n<\/strong><br \/>\nEkseriya dar\u0131 unundan yap\u0131lm\u0131\u015f pasta yerler, yani dar\u0131 ununu kat\u0131ca pi\u015firip top top edip s\u0131cak s\u0131cak sezbale bat\u0131r\u0131p yerler. Sezbal, cevizi havanda d\u00f6v\u00fcp hardal ve tuz ile kar\u0131\u015ft\u0131r\u0131p kaselere korlar ve cevizin ya\u011f\u0131m \u00e7\u0131kar\u0131p k\u0131rm\u0131z\u0131 Frenk biberi ile d\u00f6v\u00fcp o k\u0131rm\u0131z\u0131 ceviz ya\u011f\u0131yla yap\u0131l\u0131r. Peynir ya\u011f\u0131n\u0131 mezkur sezbal i\u00e7ine korlar ve pastay\u0131 bu sezbale bat\u0131r\u0131p yerler.<\/p>\n<p>Ve dahi, semiz koyun ve kuzulan, ba\u015f\u0131 ve boynuzlar\u0131 ve t\u0131rnaklar\u0131, ci\u011fer ve b\u00f6bre\u011fiyle pak ve pakize yedi kat sularda yuyup ar\u0131nd\u0131r\u0131rlar. Mezkur koyunu b\u00fcsb\u00fct\u00fcn tand\u0131rda pi\u015firip ziyafet sofras\u0131na getirirler. Ama koyunu tand\u0131rda \u00f6yle pi\u015firirler kim,sanki ilik olur.<\/p>\n<p>\u00c7erkesler, da\u011flardan avlad\u0131klar\u0131, karaca, s\u0131\u011f\u0131r ve tablal\u0131 avlar\u0131n\u0131 dahi b\u00f6yle pi\u015firirler. Da\u011flar\u0131nda keklik, tura\u00e7, karatavuk, kaz ve \u00f6rdekleri avlar ve kebap edip yerler.<\/p>\n<p><strong>\u00c7erkes Me\u015frubat\u0131n\u0131n Medhi:<br \/>\n<\/strong><br \/>\nC\u00fcmle, at s\u00fct\u00fc k\u0131m\u0131z\u0131, talkan ve ayran ve kurud ayran\u0131 ve keskin bozalar ve keskin bal \u015ferbetleri ve tatl\u0131 bal sulan ve tatl\u0131 maks\u0131ma bozalar\u0131 i\u00e7erler.<\/p>\n<p>Ekseriya suyu az i\u00e7erler. Evleri saz ve kam\u0131\u015f \u00f6rt\u00fcl\u00fc ve \u00e7it \u00f6r\u00fcl\u00fc iki\u015fer kap\u0131l\u0131 evlerdir. Atlar\u0131 ba\u015flar\u0131 u\u00e7unda ve silahlar\u0131 daima yanlar\u0131nda durur. K\u0131\u015f g\u00fcnleri, kal\u0131n me\u015fe k\u00fct\u00fckleri evlerinin orta yerinde yak\u0131p, b\u00fct\u00fcn \u00e7oluk \u00e7ocuklar\u0131yla ate\u015f bas\u0131nda sohbet edip otururlar. Evleri k\u0131\u015f\u0131n hamam gibi s\u0131cak olur.<\/p>\n<p><strong>\u00c7erkeslerin Yemek Adetleri:<br \/>\n<\/strong><br \/>\n\u00c7erkesler yeme\u011fe ba\u015flamadan, a\u011fa\u00e7 sofralar\u0131 meydana geldi\u011finde bir balmumu yakarlar, herkes bu balmumuna bir kere &#8220;Danev danev mamel\u00f6k&#8221; deyip tap\u0131n\u0131p ondan sonra yeme\u011fe ba\u015flarlar. Yine yemekten sonra muma \u00f6yle yapar, sofray\u0131 kald\u0131r\u0131rlar, bir garip tema\u015fad\u0131r.<\/p>\n<p>\u00c7erkeslerin de ya\u015fad\u0131\u011f\u0131 Kafkaslar\u0131n zira\u00ee zenginliklerine temas eden Evliya \u00c7elebi, \u00c7erkes mutfa\u011f\u0131nda \u00f6nemli bir yeri olan k\u00fcmes hayvanlar\u0131n\u0131 &#8220;(&#8230;) Yaban ve k\u0131r tavuktan da me\u015fhurdur&#8230;&#8221; diyerek ifade eder. Ayr\u0131ca da\u011flar\u0131nda, limon, turun\u00e7, zeytin, incir ve nardan gayr\u0131 her t\u00fcrl\u00fc \u00e7e\u015fit \u00e7e\u015fit meyveleri vard\u0131r, ifadesiyle de bitki \u00f6rt\u00fcs\u00fc zenginli\u011fini belirtir.<\/p>\n<p>\u00c7elebi, Seyahatnamesi&#8217;nde mutfak etnografyas\u0131na da temas eder. Gezdi\u011fi bir yeri anlat\u0131rken: &#8220;(&#8230;) B\u00fct\u00fcn heykellerin ayaklar\u0131 dibinde, laal, yakut, elmas, z\u00fcmr\u00fct, zeberced ve Seylan firuzesi, kehribarlar ve kerpi\u00e7 kerpi\u00e7 alt\u0131n ve g\u00fcm\u00fc\u015ften hesaps\u0131z, kazan ve tencereler vard\u0131. Hele, alt\u0131n ve g\u00fcm\u00fc\u015f sahanlar gayet murassayd\u0131. Kazan ve tencerelerin i\u00e7lerine onar manda s\u0131\u011facak kadar b\u00fcy\u00fckt\u00fc. Vesair, g\u00fcm\u00fc\u015f, alt\u0131ndan mamul tepsi, sahan,kebap \u015fi\u015fleri ve iskemle ve ba\u015fka e\u015fyalar\u0131n hesab\u0131n\u0131 huda bilir.<\/p>\n<p>\u00c7erkeslerin geleneksel konukseverliklerine de i\u015faret eden \u00c7elebi, kar\u015f\u0131la\u015ft\u0131\u011f\u0131 bir olay\u0131 \u015f\u00f6yle nakleder: &#8220;Allah \u015fahittir ki, aynen b\u00f6yle oldu. Bir \u00c7erkes&#8217;e misafir idik. Ev sahibimiz bize izzet ikramda kusur etmiyordu. Bir ara d\u0131\u015far\u0131 \u00e7\u0131kt\u0131. Biraz sonra i\u00e7eri girip s\u0131\u011f\u0131r derisinden sofray\u0131 orta yere yayd\u0131. A\u011fa\u00e7tan ve gayet sanatkarca yap\u0131lm\u0131\u015f sahanlar i\u00e7erisinde, pasta, peynir, bal ve ekme\u011fi \u00f6n\u00fcm\u00fcze koyup &#8220;A\u015fan konaklar, helal bulsun, benim babas\u0131 can\u0131n sevesen&#8221; yani, &#8220;Bal\u0131 yiyin helal olsun, babam\u0131n can\u0131na de\u011fsin&#8221; dedi. Biz de Mano\u011flu Hapishanesi&#8217;nden yeni \u00e7\u0131km\u0131\u015f gibi sofraya \u00f6yle bir giri\u015ftik ki, ellerimizin varup gelmesine g\u00f6z \u00f6rmezdi&#8230;&#8221;<\/p>\n<p>Evliya \u00c7elebi, Kafkaslarda tan\u0131d\u0131\u011f\u0131 bir \u00c7erkes kabilesini tan\u0131t\u0131rken onlar\u0131n beslenme ve mutfak k\u00fclt\u00fcrlerine de temas eder: &#8220;Mam\u015fu\u011flarda halis \u00c7erkes evlatlar\u0131d\u0131r. Yurtlar\u0131 Abaza da\u011flar\u0131 dibinde ve gayet sarp yerde, karanl\u0131k ulu ormanlar i\u00e7indedir. N\u00fcfuslar\u0131 on binden biraz azd\u0131r. Beyleri ve ba\u015fbu\u011flar\u0131 yoktur. Tamamen serazat ya\u015fayan bir kavimdirler. Mam\u015fu\u011flar di\u011fer \u00c7erkes kavimleri gibi kavgac\u0131 ve cengaver, asker bir millet de\u011fildir. Ehli kitap olmad\u0131klar\u0131 gibi belli bir mezhepleri de yoktur. Ba\u015fka kavimlerle asla al\u0131\u015fveri\u015f etmez, kimseye kar\u0131\u015fmazlar, yabanc\u0131lardan k\u0131z almaz, kendinden olmayana da k\u0131z vermezler.<\/p>\n<p>Yabanc\u0131larla bir sofraya oturup yemek dahi yemeyen Mam\u015fu\u011flar, ba\u015fka kavimlerin e\u015fyas\u0131na, mal\u0131na el s\u00fcrmezler, ba\u015fkalar\u0131 da onlar\u0131n hi\u00e7bir \u015feyine el vurmazlar.<\/p>\n<p>Tavuk ve domuz eti yemezler, hi\u00e7 kimsenin mal\u0131m ve yiyece\u011fini de yemezler ama misafire pek \u00e7ok riayet eder, asla misafirlerin bir \u015feyine dokunmaz, u\u011furlamazlar yani \u00e7almazlar.<\/p>\n<p>Talan, ya\u011fma ve kan d\u00f6kmezler, bal ve peynir yemezler, bakla, nohut ve pasta yemekleri mevcut olduk\u00e7a, b\u0131\u00e7akla hayvan kesip et yemezler. Me\u011fer ki yiyeceksiz kalm\u0131\u015f olalar. Yiyecek ba\u015fka bir \u015fey bulamaz, yahut ta mecbur kal\u0131rlarsa o zaman semiz hayvanlar\u0131m kesip yerler. Koyunlar\u0131, kuzular\u0131 ve s\u0131\u011f\u0131rlar\u0131 gayet \u00e7oktur, fakat domuzlar\u0131 asla yoktur. Bal suyu i\u00e7erler, boza i\u00e7mezler.&#8221;<\/p>\n<p><strong>Ha\u015fim Efendi&#8217;nin Hat\u0131ralar\u0131nda \u00c7erkes Mutfa\u011f\u0131:<br \/>\n<\/strong><br \/>\nT\u00fcrk\u00e7e&#8217;de Kafkasya&#8217;n\u0131n genel durumu ve \u00c7erkesler hakk\u0131nda bilgi veren tarihi kaynaklar yok denecek kadar azd\u0131r. Bunlardan en \u00f6nemlisi daha \u00f6nce de belirtti\u011fimiz gibi Evliya \u00c7elebi Seyahatnamesi&#8217;dir. Yine gezi t\u00fcr\u00fcnde kaleme al\u0131nm\u0131\u015f ikinci eser ise So\u011fucak muhaf\u0131z\u0131 olup, sonradan Osmanl\u0131 Devleti&#8217;nin ilk Kafkasya Valisi olan Ferruh Ali Pa\u015fa&#8217;n\u0131n katibi olan Ha\u015fim Efendi&#8217;nin hat\u0131ralar\u0131d\u0131r.<\/p>\n<p>Halen Topkap\u0131 Saray\u0131 K\u00fct\u00fcphanesi H 1564 numarada kay\u0131tl\u0131 bu eser 1969 y\u0131l\u0131nda &#8220;k\u0131smen sadele\u015ftirilip l\u00fczumsuz teferruattan ay\u0131klanmak suretiyle&#8221; Mehmet G\u00fcne\u015f taraf\u0131ndan yay\u0131mlanm\u0131\u015ft\u0131r.<\/p>\n<p>\u00c7erkes tarihinin bir b\u00f6l\u00fcm\u00fcne \u0131\u015f\u0131k tutmas\u0131 a\u00e7\u0131s\u0131ndan, az da olsa beslenme ve mutfak k\u00fclt\u00fcr\u00fcne ili\u015fkin bilgiler veren bu eser konumuz bak\u0131m\u0131ndan \u00f6nem arz etmektedir.<\/p>\n<p>Ha\u015fim Efendi&#8217;nin tespitleri \u015funlard\u0131r:<\/p>\n<p>&#8220;(&#8230;) Baz\u0131 zabitler ise, k\u0131yafetlerinden fakir olduklar\u0131na h\u00fckmetmi\u015f ve yanlar\u0131na yakla\u015f\u0131p, yumurta ve yo\u011furt i\u00e7in para vermek istiyorlard\u0131. Verilen paray\u0131 elinde evirip \u00e7eviren Da\u011fl\u0131, bunu yere at\u0131yor ve kendi dilinde biz yo\u011furt, yumurta satmay\u0131z diyerek&#8221; geleneksel \u00c7erkes misafirperverli\u011fini g\u00f6steriyorlard\u0131.<\/p>\n<p>Ha\u015fim Efendi, \u00c7erkeslerin milli karakterlerinin \u00f6nemli bir \u00f6zelli\u011fim \u015f\u00f6yle dile getirmektedir: &#8220;(&#8230;) O da \u00c7erkeslerin tatl\u0131l\u0131k ve yumu\u015fakl\u0131kla, izzet ve ikramla elde olunabilece\u011fim, zor kullan\u0131larak \u00c7erkeslerin devlet otoritesine sokman\u0131n imkans\u0131z oldu\u011funu&#8221; s\u00f6yl\u00fcyordu.<\/p>\n<p>T\u00fcrkler de ve bir\u00e7ok Do\u011fulu toplumlarda g\u00f6r\u00fclen k\u0131l\u0131\u00e7 ve ekmek \u00fczerine yemin etme seremonisinin \u00c7erkeslerde de ya\u015fad\u0131\u011f\u0131 hat\u0131ratta \u015f\u00f6yle bir olayla anlat\u0131lmaktad\u0131r: &#8220;(&#8230;) Bundan sonra pa\u015fan\u0131n \u00f6n\u00fcne bir par\u00e7a ekmek ve bir k\u0131l\u0131\u00e7 getirip kondu. \u00d6nce, hen\u00fcz bir saat evvel bu vazifeye tayin edilmi\u015f olan Deliba\u015f\u0131 Hac\u0131 Hasan, keth\u00fcda olarak Ali Pa\u015fa&#8217;n\u0131n huzuruna geldi ve ellerini k\u0131l\u0131\u00e7 ekme\u011fe koyduktan sonra, yemin etti.&#8221;<\/p>\n<p>Yine \u00c7erkes misafirperverli\u011fine ili\u015fkin olarak &#8220;(&#8230;) Alay, k\u00f6yde b\u00fcy\u00fck bir merasimle kar\u015f\u0131land\u0131, gelenler be\u015fer onar evlere misafir olundu. \u00c7erkeslerin eski adetlerine g\u00f6re, binlerce ki\u015fiyi a\u011f\u0131rlayacak kadar pasta, boza ve meze haz\u0131rlanm\u0131\u015ft\u0131. \u00c7erkesler sebze yemeklerine iltifat etmediklerinden kay\u0131npeder Hasan Bey, y\u00fczlerce koyun ve s\u0131\u011f\u0131r kesmi\u015fti.&#8221;<\/p>\n<p>Ha\u015fim Efendi&#8217;nin verdi\u011fi malumata g\u00f6re &#8220;(&#8230;) O devirde \u00c7erkesler, gen\u00e7lere, fazla hantalla\u015fmamalar\u0131 i\u00e7in karn\u0131 doyas\u0131ya ekmek yedirmezler, yumu\u015fak d\u00f6\u015fek yerine sert ve d\u00fcz ke\u00e7elerde yat\u0131r\u0131rlard\u0131. B\u00f6ylece hem v\u00fccut g\u00fczelli\u011fi korunur hem de s\u0131hhatlilik elde edilirdi.&#8221;<\/p>\n<p><strong>Mehmet G\u00fcne\u015f&#8217;in Notu: <\/strong>&#8220;\u00c7erkeslerde yeme\u011fe ba\u015flamadan, sofra b\u00fcy\u00fc\u011f\u00fcn\u00fcn bir konu\u015fma (dua) yapmas\u0131 adettir.
